Kettle Corn

I found a stove top kettle corn recipe at Our Best Bites that I am in LOVE with! I am a popcorn lover and this recipe has quickly turned into my favorite! Give it a try but I am warning you this stuff is GOOD!

Kettle Corn
1/3 c. popcorn kernels
3 T. sugar
3 T. oil
Kosher Salt

Begin heating oil in a large boiling pot. Mix popcorn kernels and sugar together in a separate bowl. Once oil is hot dump kernel and sugar mixture into the pot. Quickly stir, scraping sugar off the bottom of the pan. Do this quickly so that your popcorn doesn't begin popping sans lid. Cover the pot with lid and then drape a dishtowel over the top of the lid and hold on to the dishtowel and the handles of the pot to allow for shaking but still keeping the lid in tact. *Note keep dishtowel up and away from burner.

Let popcorn stand for 20 seconds then lift from burner and shake side to side and even up and down. Replace back on burner for another 20 seconds. Do this until you think the popcorn is just about done popping. Remove from heat and shake up and down vigorously until you no longer hear any popping. This will keep the popcorn from burning. Remove lid and sprinkle popcorn with Kosher salt and stir. Transfer to large bowl and allow to cool slightly. Then enjoy!
